Roasted root vegetables with garlic & sage

2 1/4 lbs. mixed root vegetables (potatoes, sweet potatoes, beets, carrots, etc)

2 tablespoons. olive oil

1 teaspoons. salt

1/2 teaspoon each garlic granules, dried sage and smoked paprika (or whatever spices you like)

Preheat your oven to 400 degrees.  Peel the vegetables and cut them into 1-inch cubes.  Place into a large bowl and add the olive oil, salt and spices.  Toss well to combine.  Spread into an 18 x 13” baking tray.  Bake for 50-60 minutes, rotating trays halfway through.  Season with more salt if needed, and let cool for 5 minutes before serving. Serves 3-4. This recipe can easily be doubled- just use two baking trays.  You may have to increase the bake time by 10-15 minutes depending on your oven.
