Curried carrot slaw

INGREDIENTS:

2 lbs. orange carrots, peeled

1/2 lb. yellow carrots, peeled 

1/2 lb. celeriac, peeled 

1/2 cup raisins 

1 cup roasted salted cashews, chopped

1 garlic clove, minced

1 inch knob of ginger, peeled and minced

2 large scallions, thinly sliced 

10 sprigs of cilantro, leaves and stems, thinly sliced 

1 tsp. salt

1 tsp. curry powder 

2 tsp. lemon juice

1 tbsp. olive oil


INSTRUCTIONS:

Using the largest holes on a box grater or the grating attachment of a food processor, shred the carrots and celeriac, thinly slicing any leftover chunks.  Combine the grated vegetables, the garlic, ginger, scallion, cilantro, salt, curry powder, lemon juice and olive oil in a medium sized bowl.  Taste and add more seasonings as needed.  Stir in the raisins and cashews just before serving.  Serves 6.
