Celeriac & apple slaw

1 medium celeriac bulb, trimmed and peeled, about 1/2 lb.

1 small kohlrabi bulb, trimmed and peeled, about 1/4 lb, or 1/4 lb. savoy cabbage 

1 medium carrot, trimmed and peeled, about 1/4 lb.

1 large tart, firm apple, such as maccoun or granny smith, about 1/4 lb.

2 tablespoons chopped parsley

1/4 cup mayonnaise 

2 tablespoons grainy mustard

1 tablespoon apple cider vinegar

1 tablespoon apple cider syrup or 1 teaspoon honey

salt and pepper to taste


Cut the celeriac, carrot, apple and kohlrabi (if using kohlrabi) into thin matchsticks with a mandoline or a sharp knife. If using savoy cabbage, slice as thinly as possible.

Combine the sliced vegetables in a medium sized bowl with the parsley.

In a small bowl, mix together the mayonnaise, mustard, vinegar, and cider syrup or honey, with half a teaspoon of salt and a few pinches black pepper.

Pour the dressing ingredients over the vegetables and mix well using salad tongs. Taste and add more salt, pepper, vinegar or cider syrup if needed. Serve immediately.
