Sweet potato latkes

2 lbs. peeled sweet potatoes

1 small onion, about 1/2 cup, minced

2 eggs, beaten

1/4 cup flour of choice or matzo meal

1 1/2 teaspoons salt

1/2 teaspoon black pepper

vegetable oil for frying


Grate the sweet potatoes, using a food processor with grating attachment, or a box grater. Place in a medium bowl and add the onion.

Working in batches, place the mixture in the middle of a kitchen towel and squeeze out as much moisture as you can. Put the squeezed potato mixture back in the bowl and add the salt and pepper, and mix well. Stir in the egg and flour.

Heat about 1 tablespoon of oil over medium heat in a well seasoned skillet. Add 1/4 cup of the mixture to the pan, pressing with a spoon or spatula to flatten slightly. Add more spoonfuls until the skillet is full. Cook for 3-5 minutes on each side, until golden brown and crisp.

Place on a baking tray or plate lined with a paper towel, then place in a warmed oven until ready to serve. Repeat until all batter is used, adding more oil to the skillet as needed. Serve with sour cream and applesauce.
