Raw kale salad with carrots, beets, & glazed almond

1 large or 2 small bunches green kale, cut or torn into bite sized pieces- about 8 cups

1 large carrot, peeled and grated, about 1 cup

1 small-medium beet, peeled and grated, about 1/2 a cup

1/2 cup whole almonds

2 tablespoons olive oil

2 tablespoons lemon juice, freshly squeezed if possible

2 tablespoons maple syrup

1 tablespoon butter

salt and pepper

Place the kale in a large bowl, and sprinkle with ½ a teaspoon of salt.

Combine the olive oil, lemon juice, and 1 tablespoon of the maple syrup in a small bowl.

Pour the dressing over the kale and massage with your hands for about 4 minutes, until the kale becomes tender.

Add the grated carrots and beets and toss to combine.

Season with more salt, if needed, and add pepper to taste.
